White Papers:
August 2026
Abstract:
Broiler chicken has cemented its position as the foundational protein of the U.S. food supply, with projected domestic per-capita availability reaching 105.6 pounds in 2026 and 106.5 pounds in 2027—nearly double that of beef. This widening availability gap is structurally reinforced by historic supply contractions, with the U.S. cattle herd reaching its lowest level in 75 years. Correspondingly, the USDA’s August 2026 Food Price Outlook forecasts a 9.8% midpoint inflation rate for beef and veal in 2026, while poultry prices are projected to remain virtually flat with a midpoint of just 0.5% inflation. This price environment is further highlighted by July 2026 CPI figures, showing beef and veal up 9.4% year-over-year while poultry declined by 0.5%.
Beyond commodity markets, consumer preference data from a June 2025 survey of 625 U.S. adults reveals strong willingness to pay for premium attributes, led by antibiotic-free (43%) and free-range (42%) poultry. Total organic meat-and-poultry retail sales reached $3.6 billion (up 22.5% YoY, volume up 21.9%), signaling robust premium consumer categories. However, small-scale pastured production models operate under high unit variable costs ($1.92/lb live weight) due to manual, labor-intensive management.
A 2026 peer-reviewed enterprise-budget model (Alves et al., published in Poultry Science and supported by General Mills) demonstrates that pasture systems incur an economic loss at conventional prices ($1.32/lb), but become highly viable under a premium pasture-raised price ($6.09/lb). Under this premium-price scenario, the annual break-even threshold collapses from 2,058 birds to just 445 birds. Finally, this premium opportunity is heavily bounded by geographic infrastructure constraints. State-level data from North Carolina indicates that independent, small-holder operations face severe processing bottlenecks due to high regulatory compliance costs, capital-intensive equipment, and highly seasonal production calendars that depress processing plant capacity utilization. Ultimately, this white paper outlines a calibrated, data-driven framework for regional agricultural initiatives, highlighting that economic viability for independent producers requires a careful alignment of premium direct-to-consumer marketing, value-based pricing, and right-scaled processing infrastructure.
